Killingly Agriculture Commission


     6 ripe plum tomatoes
     2 cloves garlic, minced or crushed
     Fresh basil leaves, thai basil or rosemary to taste.  Cut or chop to desired consistency.
     1 Tbsp. extra virgin olive oil
     1 Tsp. balsamic vinegar
     Salt and pepper to taste
     1 baguette French bread or similar Italian bread
     1/4 cup olive oil
     1. Prepare the tomatoes first.  Slice, seed and chop into a large bowl.  Add in the garlic, vinegar, herbs, salt, pepper and tsp of oil and set aside.
     2. Brush each side of a 1/2″ slice of bread with olive oil using a brush.  Toast in a skillet, on a grill, or in a 450 degree oven on the top rack until golden brown.
     3. Scoop the tomato mixture on top of a slice of bread right before serving.  Enjoy!
