Lets Use Underused Vegetables.
L.U.U.V. Days was sponsored in conjunction with the Northeast CT Farmers Market Association at their Danielson Market. The concept was to introduce the public to vegetables that they might not know how to use, or to demonstrate a new way of using something they were familiar with. Farmers often get the question, “What is it and what do I do with it?” We chose Kale, Butternut Squash, Herbs and Beets to prepare and give out free samples.
Steven’s Farm in East Killingly prepared sauteed Kale.
Renee’s Working Girl Catering of East Killingly prepared Butternut Squash Pancakes. What a way to eat butternut squash, especially with the special topping they put on.
Heirloom Food Co. of Danielson prepared their famous “Beta Burgers” made from beets and other ingredients. What a way to get the little ones to eat beets.
